About Us
Johnson’s of Thirsk has been a traditional family Butchery since 1830. Under the ownership of Sarah-Jane & Andrew Trueman, both 2nd & 3rd-generation Butchers respectively, the business has broadened its offering from traditional Butcher’s shop to include charcuterie, condiments and complimentary foodstuffs, as well as totally revamping the sourcing to ‘buy local, sell local’.
In 2018, the business underwent one of its' biggest transformations in our 190-year history in 2018-19; moving premises to a double-fronted Victorian bay-windowed shop in Thirsk’s historic market square.
Our Business
Sarah-Jane & Andrew, partners at work and at home, have thrown their all into their shared business in the bustling market town at the heart of North Yorkshire.
Sarah & Andrew have nurtured two other ventures alongside the traditional Butchery; a ‘Butchery School’ where members of the public can book their place to watch two Master Butchers transform a sow to a sausage before trying the craft for themselves, and a catering company that is in such high demand they’re taking bookings for 2023.
Our Suppliers
With the industry focus on traceability, provenance and sustainability; we took the decision to source only local products. We did this whilst also broadening our offering to include charcuterie, cheeses, condiments, coffees and desserts, amongst others.
Our supply chain could not be any shorter. It’s Yorkshire first and Yorkshire only.
